As founder and CEO of North Moore Hospitality Group, Jessica Jazey-Spoelstra leads a growing portfolio of restaurants and a catering division, each defined by its own identity yet united by from-scratch food, elevated service standards and memorable guest experiences.
Her role spans strategic planning, financial oversight, brand development and team leadership — reflecting a hands-on approach shaped by a deep understanding of every layer of the business. “Early in my career, I saw gaps in how restaurants were run, both operationally and culturally, and I believed there was a better way to do it,” explains Jazey-Spoelstra. “I was motivated by the desire to build something of my own — something where quality, culture and experience weren’t compromised.”
“I’ve learned to delegate more, protect my time where possible and recognize that burnout doesn’t make you a better leader. Long-term performance requires sustainability”
Her evolution as a restaurateur has been marked by decisive thinking, recognizing that clarity drives results. Culture, she believes, is built through daily actions — how teams are hired, trained and supported — ultimately shaping the guest experience. “We prioritize accountability, teamwork and development, especially giving young staff opportunities to grow and learn responsibility. A strong internal culture creates consistency, and consistency builds trust with your guests.”
